Sweet Potato Hash

Sweet Potato Hash

Ingredients
  

  • 3 lbs. sweet potatoes
  • 1/4 cup blended oil
  • 1/2 stick unsalted butter
  • 1 large red onion diced
  • 1 large red pepper diced
  • 1 large yellow pepper diced
  • 1/2 cup light brown sugar
  • 1 tsp. cinnamon
  • 1/2 tsp. nutmeg
  • 1/4 tsp. ground ginger
  • 1 tsp. pure maple syrup

Instructions
 

  • Cook potatoes in a large pot of boiling salted water until slightly soft, approximately four minutes.
  • Drain, rinse under cold water; drain. Transfer to a large bowl.
  • Melt 1 tablespoon of butter with oil in a large heavy skillet over medium heat. Add onions and sauté until tender, then add peppers.
  • Continue sautéing until onions are golden and peppers are tender (about 10 minutes).
  • Transfer onions and peppers mixture to the bowl with the potatoes. Add brown sugar and spices and toss to mix.
  • Melt remaining 3 tablespoons of butter in a large, nonstick skillet over medium heat
  • Add potatoes to skillet, spreading in even layer pressing with the back of a spoon or spatula.
  • Cook until golden brown, turning occasionally for about 15 minutes.
  • Season with salt and pepper and serve.
