Chocolate Date Nut Truffles

Ingredients
- 2/3 cup pecans
- 26 soft dates pitted
- 4 tbs. cocoa powder
- 2/3 cup desiccated coconut
- 1 cup desiccated coconut for rolling
Instructions
- Blend pecans in food processor.
- Add dates and blend until tiny.
- Add cocoa powder and 2/3 cup of coconut. Blend until Sticky.
- Scoop with tablespoon and roll gently into balls.
- Roll in cup of desiccated coconut.
- Refrigerate until ready to serve, can be frozen.
