Sweet Potato Hash
light brown sugar
pure maple syrup
Cook potatoes in a large pot of boiling salted water until slightly soft, approximately four minutes.
Drain, rinse under cold water; drain. Transfer to a large bowl.
Melt 1 tablespoon of butter with oil in a large heavy skillet over medium heat. Add onions and sauté until tender, then add peppers.
Continue sautéing until onions are golden and peppers are tender (about 10 minutes).
Transfer onions and peppers mixture to the bowl with the potatoes. Add brown sugar and spices and toss to mix.
Melt remaining 3 tablespoons of butter in a large, nonstick skillet over medium heat
Add potatoes to skillet, spreading in even layer pressing with the back of a spoon or spatula.
Cook until golden brown, turning occasionally for about 15 minutes.
Season with salt and pepper and serve.
