Tomato Tortellini Soup
Ingredients
- 1 can peeled Italian tomatoes
- 1 package cheese tortellini
- 1/2 onion chopped
- 1/4 cup garlic chopped
- 1 tablespoon olive oil
- 1/2 cup red wine
- 1/4 cup Parmesan cheese
- 1/2 cup heavy cream
- 1/2 cup sugar
- 1 tablespoon basil
- 1 tablespoon oregano
- salt and pepper to taste
- fresh basil garnish
Instructions
- Sauté onion and garlic in olive oil until light golden brown.
- Add red wine and reduce until almost gone.
- Cook tortellini according to package directions.
- In a blender, puree the can of Italian tomatoes. Once pureed, add tomatoes to the soup pot.
- Stir soup and add cheese, sugar, basil and oregano. Add heavy cream last.
- Add salt and pepper to taste.
- Add cooked tortellini to the soup and garnish it with fresh basil.
