Instructions
For the dough:
  1. Place the flour, sugar and butter into a food processor and process it until it resembles fine breadcrumbs.
  2. Slowly add the iced water until a smooth dough forms.
  3. Knead the dough into a ball on a lightly floured surface.
  4. Wrap in plastic wrap and pop it into the fridge for at least 30 minutes.
For the filling:
  1. Sauté peaches and butter over medium heat, add blueberries, peach schnapps, sugar, cinnamon and vanilla.
  2. In a small bowl combine cornstarch with 3 tablespoons of water. Stir until smooth paste forms, then whisk into the hot, simmering mixture to thicken.
  3. Cool mixture and roll dough out to 12 inch circle. Place mixture in middle of dough. Fold in sides with pleats. Brush with water and sprinkle with sanding sugar.
  4. Bake at 350 degrees for 20 minutes.
