Sweet Potato Hash

Ingredients
- 3 lbs. sweet potatoes
- 1/4 cup blended oil
- 1/2 stick unsalted butter
- 1 large red onion diced
- 1 large red pepper diced
- 1 large yellow pepper diced
- 1/2 cup light brown sugar
- 1 tsp. cinnamon
- 1/2 tsp. nutmeg
- 1/4 tsp. ground ginger
- 1 tsp. pure maple syrup
Instructions
- Cook potatoes in a large pot of boiling salted water until slightly soft, approximately four minutes.
- Drain, rinse under cold water; drain. Transfer to a large bowl.
- Melt 1 tablespoon of butter with oil in a large heavy skillet over medium heat. Add onions and sauté until tender, then add peppers.
- Continue sautéing until onions are golden and peppers are tender (about 10 minutes).
- Transfer onions and peppers mixture to the bowl with the potatoes. Add brown sugar and spices and toss to mix.
- Melt remaining 3 tablespoons of butter in a large, nonstick skillet over medium heat
- Add potatoes to skillet, spreading in even layer pressing with the back of a spoon or spatula.
- Cook until golden brown, turning occasionally for about 15 minutes.
- Season with salt and pepper and serve.
